Superbowl Sunday has been declared (not officially) as a national holiday. We gather with friends and family to watch the big game, even if it’s not our team. There is even traditional food served and it’s usually not very healthy. Food like; sausage and peppers, buffalo wings, chili with all the fixings, pigs in a blanket, chips and let’s not forget…lots of pizza & beer!
As you know I always say everything in moderation. So yes, indulge on Superbowl Sunday but don’t let the left overs be dinner for the rest of the week. Many of the foods served can be frozen for the next time you feel the need for a treat. You can store the wings in the freezer for 4-6 month. The sausage and peppers, chili and even the rolls can be frozen for 3 months. I like to freeze leftovers in zip lock bags making sure the bulky food like wings or burgers are in a single layer. I press out chili, soups and sauces flat so it comes to the edge of the freezer bag and lies flat in the freezer. Place them on a cookie sheet toward the back of the freezer. Once frozen you can move them around and even tilt up on its side. This method takes up a lot less space in the freezer.
If you had a veggie tray…good for you! This is probable the only tray you can continue to eat this week. Place a little bit of every kind of vegetable you have in 5 separate baggies/containers. This can be one of your daily snacks along with a little hummus. Roast them up for dinner or make a vegetable soup. Let none go to waste.
Side note: After you have enjoyed a healthy snack every day, instead of vending machine food, you will understand why I say to clean and cut your vegetables for the week. This is a good habit to get into.
If you served chili this is usually a good healthy meal that can be enjoyed after game day as well. Just beware of the toppings. Leave off the sour cream and cheese. Try a small amount of diced red onion, a tablespoon of homemade guacamole and some fresh cilantro instead.
